Not fried but oven baked, this simple chicken recipe could be a good addition to your dinner favorites.

- 6 pcs chicken breast- halves, skinned if desired
- 1/4 cup butter- melted
- 1 can orange juice concentrate
- 1/4 cup honey
- 3/4 cup fine bread crumbs
- 1/2 cup all purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon iodized salt
- Brush chicken breast with butter;
- Combine diluted orange juice and honey in shallow dish,
- Mix bread crumbs, flour, paprika and salt;
- Roll chicken in honey mixture, then in bread crumbs mix;
- Place chicken in a large baking pan and drizzle with any remaining butter or honey mixture;
- Bake at 375 temp for 30 to 40 minutes or until tender and no longer pinkish.
Best to serve with: Italian Cheesy Noodles
SOME TIPS/ PRINCIPLES INVOLVED IN CHICKEN COOKERY:
- Generally, low temperature is desirable. Since chicken is a protein food, it easily toughens at high temperature. Low temperature produces meat that is tender and evenly cooked.
- During roasting, the skin may become dry and hard, because chicken contains only a small amount of fats, fat maybe added to prevent it from drying up.
- If the chicken is floured or breaded, set aside for 10 minutes before frying to allow the coating to adhere to the chicken.
- Paprika and salt may be added to flavor the chicken. Paprika improves the color ang aids in giving the chicken a crisp surface.
