True comfort food in a matter of minutes; that’s what this dish is all about. Crispy chicken in a white wine sauce with wonderful braised greens and a pop of zesty citrus freshness; it really doesn’t get better than that for a speedy midweek supper.

Serves: 4

Ingredients (US & METRIC):

2 tbsp olive oil
100g/ 3 ½ oz smoked streaky bacon, roughly chopped
6 bone on chicken thighs, with skin on
1 tbsp butter
Grated zest of 1 lemon
A few thyme sprigs
75ml/ 2 ½ fl oz white wine
50oml/ 17 fl oz chicken stock
650g/ 23 oz rooster potatoes, quartered
200g/ 7 oz frozen peas
6 spring onions, trimmed and sliced in half
4 baby gem lettuce, sliced in half
Sea salt and freshly ground pepper
