Bruschetta Topped With Garlic Scape Pesto

Bruschetta has been made in Italy for hundreds of years. It may surprise some to know what actually qualifies as bruschetta. Although most Italian-American restaurants tend to rely on almost identical recipes including tomatoes, garlic, cheese and onions the earliest bruschetta recipes pre-date the introduction of tomatoes to Italy. So what exactly is bruschetta? Quite simply, it has traditionally been toasted bread topped with olive oil and rubbed with fresh garlic. That is really all you need for authentic bruschetta. Sounds more like garlic bread, you say? Well, that’s because it is. Any additions made to the bread do not alter its status as bruschetta, hence all the bruschettas loaded with a myriad of ingredients. My favorite bruschetta is topped with garlic scape pesto. I do skip the traditional rubbing of the garlic clove, since there is already a strong garlic flavor in the pesto. Here is my recipe for homemade garlic scape pesto followed by a foolproof way to make perfect bruschetta in your toaster oven.

Medieval Lasagna Meets Modern Day Lasagna

The first known reference to lasagna dates back to Medieval Italy. It was quite different from the well-known dish of today. For starters, there were no tomatoes in Italy at that time and therefore no tomato sauce. Instead the noodles were simply topped with grated hard cheeses and spices. The second large difference is in the noodles themselves. They were cut into squares, about 2 inches by 2 inches. And the dough that produces the noodles was distinctly different from modern pasta dough. It was fermented with naturally occurring yeasts just as breads of the time were, also referred to as naturally leavened. This gives the lasagna noodles a much different texture due to the gasses produced during the rising process.
