Apart from the 2 traditional Vietnamese mooncakes (one with golden pastry “banh nuong” and the other with cooked glutinous rice flour “banh deo”), snow skin mooncake are gaining its momentum among the young generation, too. With chilling, slightly chewy, soft and smooth skin, as wel as gently sweet mung bean filling, they are so pretty to look at and taste wonderfully. Let’s give it a try!

► Ingredients:
Yield: 9 pcs (100g each)

For the skin
75g powdered sugar
70g glutinous rice flour
50g rice flour
30g corn starch
280g milk
30g vegetable oil
food coloring: red, blue
30g glutinous rice flour for dusting

For the filling
250g peeled split mung bean
500ml water
170g sugar
45g glutinous rice flour
75g vegetable oil
1/4 tsp salt
80g maltose or glucose syrup
9 salted egg yolks
1 tbsp cooking wine
1 tsp sesame oil
